'Cheesy' Cauliflower, Celeriac, and White Bean Soup

A tasty and nutritious soup with a diversity of plant fibre and protein, to keep the blood sugar levels well-balanced. The nutritional yeast gives it a ‘cheesy’ flavour while being free from dairy.
Leave out the onion, leek and garlic if you don’t tolerate them well.
Serves 4
2 tbsp. extra virgin olive oil
1 small cauliflower, diced
½ head celeriac, diced
1 small onion, diced
1 leek, sliced thinly
2 cloves garlic, chopped small
1 litre of vegetable stock or bone broth
1 jar of white beans, drained and rinsed well
1 tbsp. nutritional yeast
1 tsp. sea salt
Freshly ground black pepper
1 tsp. mustard (optional)
Prepare the vegetables, heat the oil in a large heavy bottomed pan, and add the onions, leek and garlic (if using). Lightly sauté over a medium heat for a few minutes, then add the remaining vegetables. Continue to cook, while stirring to ensure it doesn’t stick to the bottom of the pan.
Season well and add the stock or bone broth, along with the rinsed beans, nutritional yeast, and mustard, if using. Cover and cook for 20-25 minutes or until all the vegetables are soft and cooked through. Blend with a stick blender or in a food processor until smooth. Serve with a drizzle of olive oil and a sprinkle of chilli flakes.
